Beerenberg Slow Cooker Spanish Chicken
1kg diced chicken thigh, 1 diced chorizo sausage, 1 sliced red onion, 1 tin diced tomato (400g), 100ml chicken stock, 125gm green stuffed olives (optional)
Heat 1 tbsp. of oil in a pan, Brown chicken, chorizo and onion before adding to slow cooker with remaining ingredients, including the contents of the jar, rinsed out with the chicken stock. Stir to combine. Cook on high for 2 1/2 – 3 hours or low for 4-5 hours. Serve with mashed potato, herbed couscous, pasta or rice and top with Greek yoghurt and flat leaf parsley.
